The Story of Suya: West Africa's Greatest Street Food

Walk through any Nigerian city after sundown and you'll smell it before you see it: the smoke and the pepper of suya.
This grilled, spiced meat originated with the Hausa people of northern Nigeria. The signature spice blend — "yaji" — is a closely guarded family recipe in many homes: ground peanuts, ginger, cloves, garlic, and chili working in concert with salt and a touch of bouillon.
